Stuffed Bell Peppers
Step by Step:



Make them full sized. 

Or make them bite sized for a shareable appetizer.


Stuffed Bell Peppers

Ingredients:
  • 4-6  large bell peppers (any color) or a pack of mini sized bell peppers.
  • 1 lb (Yves) meatless ground meat 
  • tablespoons chopped onion
  • tablespoons chopped zucchini
  • 1 cup cooked quinoa
  • 1 teaspoon salt
  • 1-2 clove garlic, finely chopped
  • 1 can (15 oz) organic tomato sauce
  • 3/4 cup shredded (Trader Joe's) lite mexican blend cheese (3 oz)
  • 1/4 cup parmesan cheese 
  • 1 tablespoon extra virgin olive oil
* for a bit of a kick, add a sprinkle of cayenne pepper to the mix 
Directions:

  1. Cut off stem from each bell pepper by removing the tops of peppers. Remove seeds and membranes. Rinse peppers. If necessary, cut thin slice from bottom of each pepper so they stand up straight. In 8-inch square baking dish, place peppers upright. 
  2. In 10-inch skillet, heat oil and sauté minced garlic. Careful not to burn.
  3. Add meatless ground meat, onions and zucchini over medium heat (8 to 10 minutes), stirring occasionally, until protein is thoroughly heated and soft. Stir in cooked quinoa, salt, and tomato sauce; cook until sauce is at a slight boil and any liquid is reduced.
  4. *Optional: Add cayenne pepper to the mix and stir.
  5. Heat oven to 350°F
  6. Sprinkle parmeson cheese in the bottom of each upright bell pepper.
  7. Stuff peppers with protein mixture while peppers are standing upright in (ungreased) 8-inch square glass baking dish.
  8. Cover tightly with foil. Bake 10 minutes. Uncover and bake about 10 minutes longer or until peppers are tender. Remove peppers, sprinkle with cheese and put them back in the oven for an additional 2-3 minutes in order to melt the cheese.
  9. Let cool and enjoy :)


Baked Broccoli

Ingredients:
  • 1 bag of organic chopped broccoli 
  • 3-4 cloves of garlic
  • 1 lemon
  • 1 tablespoon extra virgin olive oil
  • salt and pepper for taste
Directions:
  1. Pre-heat oven 400
  2. mince garlic cloves
  3. In a large mixing bowl, pour bag of broccoli, along with minced garlic, olive oil and lemon together. Using your hands, carefully toss mixture together thoroughly.
  4. Spread broccoli mix on to a baking sheet evenly.
  5. Cook 12-14 minutes. (For extra crunch cook less time). 

Delicious Red Wine


I have to share this wine with all my fellow winos... Green Fin is definitely an under rated secret gem in the world of wine! It's made entirely of organic grapes and rests on a full- bodied flavor of fruit with hints of vanilla and mocha. Truly one of my favorite reds, and the best part is is it's under $5. Absolutely splendid!
